Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the yolks of 8 eggs with 1 ½ cups sugar until well combined.

  2. Add 10 finely crushed Uneeda biscuits to the egg mixture.

  3. Stir in 1 cup of grated walnuts and the juice and grated rind of ½ lemon.

  4. Gently fold in the beaten whites of 8 eggs.

Bake

  1. Pour the mixture into a pan (do not grease) and bake in a slow oven at 300°F (150°C) for 40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped whites trap air, giving the torte its light, airy lift as it bakes.
Egg yolks
Yolks enrich the batter, adding richness, moisture and a set custardy structure.
Uneeda biscuits
Crushed biscuits add body and dry crumb, giving the torte its structure in place of flour.
Walnuts
Grated walnuts add fat, texture and a toasty, nutty flavour.
Sugar
Sugar sweetens the batter and helps stabilise the beaten yolks.

The step that matters

Fold in the beaten egg whites gently. Folding keeps the air bubbles in the whipped whites intact. Stirring or deflating them makes the torte dense instead of light.
