Ingredients

Directions

The book says “a good oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pudding

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the grated bread, lemon zest, ½ cup sugar, egg yolks, and milk.

  3. Pour the mixture into a baking dish and bake for 20 to 30 minutes until set.

Make the meringue and finish

  1. In another bowl, beat the egg whites until stiff peaks form, then gradually add ½ cup sugar and the lemon juice.

  2. Spread the meringue over the pudding and return to the oven to brown lightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Baker's bread
Forms the body of the pudding as it soaks up the milk and sets when baked.
Egg yolks
Enrich the custard and help it set into a soft, smooth texture.
Egg whites
Whipped into stiff peaks to form a light meringue that browns on top.
Milk
Supplies the liquid that the bread absorbs and the egg yolks set into custard.
Sugar
Sweetens the pudding and helps the meringue whip and hold its structure.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.

The step that matters

Beating the egg whites to stiff peaks. Whites must be whipped until stiff and the sugar added gradually so the foam holds its shape. Under-whipped or oily whites will weep or flatten on top of the pudding.
