Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

Assemble

  1. Mix melted butter with bread crumbs, nutmeg, cinnamon, and half of the sugar.

  2. In a buttered dish, layer half of the crumb mixture, followed by half of the apples and half of the remaining sugar.

  3. Repeat the layers with the remaining crumbs, apples, and sugar.

  4. Drizzle lemon juice over the top and add a few tablespoons of water to moisten.

Bake and serve

  1. Bake covered for 30 to 40 minutes.

  2. Serve with any sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the fruit base and moisture that softens during baking.
Bread crumbs
Form the soft layered body that soaks up the apple juices and butter.
Butter
Adds richness and helps the crumbs brown as they bake.
Sugar
Sweetens the dish and helps the apples caramelize slightly as they cook.
Lemon juice
Adds acidity that brightens the sweetness of the apples and sugar.

The step that matters

Bake covered. Covering the dish traps steam so the apples cook through and soften before the crumbs over-brown. Uncovered baking too early can dry the top while the fruit stays firm.
