Soufla Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Soak the bread crumbs in the milk.

  2. Mix the soaked crumbs with sugar, lemon rind, butter, and egg yolks.

  3. Bake until thickened at 350°F (175°C).

  4. Once cooled, spread a layer of jelly over the top.

  5. Beat the egg whites until light, then add nearly 1 teacup sugar and lemon juice.

  6. Heap the meringue over the jelly and bake until browned.
