Coffee Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add the molasses and coffee, mixing well.

  4. In a separate bowl, combine the flour, baking soda, cloves, allspice, cinnamon, and nutmeg.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  6. Fold in the raisins.

Bake

  1. Pour the batter into a greased baking pan and smooth the top.

  2. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the cake together as it bakes.
Butter
Adds fat for a tender crumb and rich flavor.
Sugar
Sweetens the cake and helps create a light, fluffy creamed base.
Molasses
Adds moisture, dark color, and deep sweetness.
Baking soda
Reacts with the acidic molasses and coffee to help the cake rise.

The step that matters

Stirring the dry ingredients into the wet mixture. Overmixing once flour is added develops gluten, which can make the cake tough and dense. Stir only until just combined.

Swap the allspice

How well each one fits the dish's main ingredients (flour, butter, coffee, molasses, sugar, raisin, clove):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Cardamomfits about as well
  4. Allspicethe original

Fit is the average pairing score against flour, butter, coffee, molasses, sugar, raisin, clove. Candidates are from the same food group and used in at least 100 recipes.
