Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the sugar and butter.

  2. Add the eggs one at a time, mixing well after each addition.

  3. In a separate bowl, sift together the flour, baking soda, cream of tartar, cinnamon, and cloves.

  4. Gradually add the dry ingredients to the wet mixture, alternating with the sweet milk.

  5. Mix until just combined, then pour into a greased cake pan.

Bake

  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Add structure and richness, helping the batter bind and rise.
Flour
Forms the structure that holds the cake together as it bakes.
Butter
Adds fat for a tender crumb and rich flavor.
Sugar
Sweetens the cake and helps it brown and keep moisture.
Baking soda
Reacts with the acidity in the batter to help the cake rise.
Cream of tartar
Acidifies the batter, supporting the rise and a lighter texture.

The step that matters

Mix until just combined. Overmixing the batter after the flour is added develops gluten, which can make the cake tough and dense. Stop once the streaks disappear.

Swap the clove

How well each one fits the dish's main ingredients (sugar, butter, egg, milk, flour, cinnamon, cream):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits about as well
  4. Clovethe original

Fit is the average pairing score against sugar, butter, egg, milk, flour, cinnamon, cream. Candidates are from the same food group and used in at least 100 recipes.
