Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the filling

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, mix melted butter, sugar, milk or cream, lemon juice, egg yolks, and corn starch until smooth.

  3. Pour the mixture into a pie crust and bake for 25-30 minutes until set.

Frost and brown

  1. For the frosting, beat the egg whites until soft peaks form, then gradually add sugar and beat until stiff peaks form.

  2. Spread the frosting over the baked pie and return to the oven for 5-10 minutes until lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the filling and add richness as they set with heat.
Butter
Adds fat and richness to the smooth filling.
Corn starch
Thickens the filling so it sets firmly when baked.
Egg whites
Whipped into a stiff foam that forms the frosting and browns in the oven.
Sugar
Sweetens the filling and helps the frosting whip into a stable foam.

The step that matters

Beating the frosting to stiff peaks. Egg whites must be beaten until stiff and sugar added gradually so the foam holds its shape and does not weep or collapse in the oven. Under-beaten whites spread flat and can slide off the pie.
