Why it works: Butter and flour are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Hot Gingerbread and Wafers
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the batter
Preheat the oven to 400°F (200°C).
Mix the butter, molasses, cold water with dissolved baking soda, and ground ginger until smooth.
Add the sifted flour and salt, stirring until well combined.
Bake and serve
Pour half of the batter into a shallow pan and bake for about 20 minutes.
Drop the remaining batter by half teaspoons, two inches apart, onto inverted, buttered tins and bake until crisp.
Serve the gingerbread hot, breaking it into portions instead of cutting.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Butter
- Adds fat that gives the wafers a tender, rich texture.
- Molasses
- Provides sweetness, moisture and the deep brown colour of the gingerbread.
- Baking soda
- Reacts with the molasses's acidity to lighten the batter and help it spread and brown.
- Flour
- Provides the structure that sets the batter as it bakes.
The step that matters
Baking the remaining batter until crisp. Thin drops of batter can go from crisp to burnt quickly, and dark molasses browns faster than it looks. Watching closely keeps the wafers crisp without bitterness.
