Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the mixture so it holds a smooth, firm texture as it freezes.
Egg whites
Whipped until stiff, they add lightness and a airy, foamy texture to the frozen mixture.
Sugar
Sweetens the juice and softens the frozen texture so it is not rock hard.
Lemons
Provide the juice that gives the ice its tart, acidic flavour.

The step that matters

Folding in the egg whites. Stiffly beaten whites trap air, which gives lightness. Folding gently keeps that air in; stirring hard deflates the foam and makes the ice dense.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
