Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

Make the batter

  1. Stir in the milk and bread dough until combined.

  2. Fold in the raisins and baking soda.

  3. Add spices to taste.

  4. Pour the batter into a greased loaf pan.

Bake

  1. Bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread dough
Provides the bulk and yeasty, dense body of the cake's crumb.
Butter
Adds fat for tenderness and a rich flavour when creamed with sugar.
Sugar
Sweetens the cake and helps it brown while creaming aerates the batter.
Eggs
Bind the batter and add structure as the cake sets in the oven.
Milk
Adds moisture and loosens the batter for an even bake.
Baking soda
Reacts with acidic ingredients to help the loaf rise and brown.

The step that matters

Adding the baking soda. Baking soda needs an acid to react and produce gas. Folding it in gently and baking promptly keeps the rise even, so the loaf does not collapse or turn out dense.

Swap the raisin

How well each one fits the dish's main ingredients (bread, sugar, butter, egg, milk):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits about as well
  4. Raisinthe original

Fit is the average pairing score against bread, sugar, butter, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
