  2. Stir the mixture to form a yellow-brown cream.

  3. Add the milk, beaten eggs, and flour, and mix well.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Adds sweetness, moisture, and the dark color and rich flavor of gingerbread.
Butter
Adds fat for a tender crumb and rich flavor.
Eggs
Bind the batter and add structure as they set during baking.
Flour
Provides the structure that holds the baked cake together.
Baking soda
Lifts the batter by reacting with the acidity of the molasses.
Brown sugar
Adds sweetness and moisture, and helps the crumb stay soft.

The step that matters

Bake until cooked through. Underbaked gingerbread stays gummy in the center because the egg and flour proteins and starches have not set. Overbaking dries the crumb, so check for doneness rather than relying only on the color.

Swap the mace

How well each one fits the dish's main ingredients (butter, milk, sugar, molasses, flour, cinnamon, ginger):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Clovefits better
  4. Macethe original

Fit is the average pairing score against butter, milk, sugar, molasses, flour, cinnamon, ginger. Candidates are from the same food group and used in at least 100 recipes.
