What each ingredient does

Eggs
Bind the mixture and add structure as they set during boiling.
Bread crumbs
Absorb liquid and give the pudding a soft, moist body.
Suet
Adds fat that keeps the pudding rich and tender as it cooks.
Raisins
Provide sweetness, chewy texture and moisture to the pudding.
Moist sugar
Adds sweetness and a deeper molasses-like flavour.
Brandy
Adds aroma and flavour and helps keep the pudding moist.

The step that matters

Tying the cloth. The cloth must be tied tightly so the mixture holds its shape while boiling. If it is loose, water can enter and make the pudding soggy and crumbly.

Swap the currant
