  1. In a saucepan, combine lemon juice, lemon rind, water, corn starch, and sugar.

  2. Stir the mixture and bring it to a boil.

  3. Once boiling, pour it over the butter in a mixing bowl.

  4. After cooling, add the egg and mix well.

  1. Pour the filling into a pie crust and cover with another crust.

  2. Bake at 350°F (175°C) until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the lemon mixture into a smooth, sliceable filling as it boils.
Egg
Adds richness and helps set the filling as it bakes.
Butter
Adds fat for a smooth, rich texture and mouthfeel.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Lemon juice
Provides the tart acidity that defines the pie's flavor.

The step that matters

Boiling the lemon mixture before adding the egg. Corn starch only thickens fully once it reaches a boil, so the filling must come to a full boil and cool before the egg is added. Adding the egg to hot filling can scramble it, leaving lumps and an uneven texture.

Swap the lemon
