Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  2. Cream the butter and sugar together until light and fluffy.

  3. Beat in the eggs one at a time.

  4. Mix in the cold coffee.

Mix and bake

  1. In a separate bowl, combine the flour, baking soda, nutmeg, cloves, cinnamon, and raisins.

  2. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  3. Pour the batter into a greased cake pan and bake for 30-40 minutes or until a toothpick comes out clean.

What each ingredient does

Butter
Creams with sugar to trap air, giving the cake a light, tender crumb and rich flavour.
Sugar
Sweetens the cake and helps the creamed butter hold air for a light texture.
Flour
Forms the cake's structure once mixed with the wet ingredients.
Eggs
Bind the batter and add structure and richness as they set in the oven.
Baking soda or baking powder
Releases gas in the batter so the cake rises and becomes lighter.
Strong cold coffee
Adds moisture and a deep coffee flavour to the batter.

The step that matters

Stirring in the dry ingredients. Once flour meets liquid, gluten begins to form. Stirring only until just combined keeps the crumb tender rather than tough and dense.

Swap the clove

How well each one fits the dish's main ingredients (butter, sugar, flour, egg, coffee, nutmeg, cinnamon):

  1. Cardamomfits better
  2. Allspicefits about as well
  3. Clovethe original
  4. Gingerfits less well

Fit is the average pairing score against butter, sugar, flour, egg, coffee, nutmeg, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
