What each ingredient does

Suet
Adds fat that keeps the pudding moist and rich as it cooks.
Flour
Provides the structure that holds the pudding together.
Molasses
Adds sweetness, dark color, and a deep flavor.
Baking soda
Reacts with the acidic molasses to help the pudding rise and lighten.
Raisins
Add chewy texture and concentrated sweetness throughout the pudding.
Sweet milk
Adds moisture and helps bind the batter together.

The step that matters

Securing the cloth over the mold. A loose cover lets water seep into the pudding during the long boil, making it soggy and dense. A tight seal keeps the steam inside so the pudding cooks evenly and stays moist.

Swap the currant

How well each one fits the dish's main ingredients (milk, molasses, sugar, raisin, flour, cinnamon, clove):

  1. Vanillafits better

Fit is the average pairing score against milk, molasses, sugar, raisin, flour, cinnamon, clove. Candidates are from the same food group and used in at least 100 recipes.
