Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Dissolves into the water to sweeten the base and softens the texture of the frozen ice.
Lemon juice
Provides the sharp acidity that gives the ice its bright flavour.
Lemon rind
Adds aromatic oils from the peel, deepening the lemon flavour during infusion.
Egg whites
Whipped air and proteins add lightness and a smoother, less icy texture.

The step that matters

Gently stir in the well-beaten egg whites. Egg whites hold air only when whipped, so stirring them in gently preserves the foam; vigorous mixing would deflate it and make the ice denser.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
