Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and moisture, and their sweetness and aroma flavour the pudding.
Eggs
Bind the mixture and set as it cooks, giving the pudding its structure.
Bread crumbs
Absorb moisture from the apples and eggs, giving the pudding body and a soft texture.
Grated lemon peel
Adds bright aroma that balances the sweetness of the apples.

The step that matters

Steaming or boiling gently for the full time. The eggs and crumbs need prolonged, moderate heat to set through the centre. Boiling too vigorously or cutting the time short can leave the pudding wet or unevenly firm.
