George Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Simmer the rice in milk until tender but not broken; drain it.

  2. In a stewpan, combine the apples, lemon peel, and sugar; stew gently until pulpy.

  3. Stir the apple mixture into the rice along with the candied citron and beaten egg yolks.

Bake and serve

  1. Butter a mold. Whisk the egg whites to a froth and mix with the rice mixture.

  2. Pour the mixture into the mold and bake in a preheated oven at 350°F (175°C) for 30 minutes.

  3. Turn it out and serve with custard poured around.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the starchy body of the pudding as it absorbs milk and softens.
Apples
Add moisture and a soft, pulpy fruit flavor that sweetens the pudding.
Egg yolks
Enrich the pudding and help bind it as they set with heat.
Egg whites
Whisked air lightens the mixture and helps it rise and set in the oven.
Sugar
Sweetens the apples and balances the tartness of the lemon peel.

The step that matters

Mixing in the whisked egg whites. Whites hold air only until they are overmixed or deflated. Folding them gently into the rice mixture keeps the bubbles that give the baked pudding its lightness.

Swap the apple

How well each one fits the dish's main ingredients (rice, milk, lemon, sugar, egg):

  1. Vanillafits better
  2. Coconutfits better
  3. Orangefits better
  4. Applethe original

Fit is the average pairing score against rice, milk, lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
