Apple Charlotte
Ingredients
Directions
Peel the apples thinly with a sharp knife.
Slice the apples and remove the core.
Place the sliced apples in a saucepan with enough sugar to sweeten and ⅓ cup of water.
Wipe the lemon clean and peel it very thin.
Tie the lemon rind with twine and add it to the saucepan.
Heat the saucepan on the stove, stirring until it boils and the apples reduce by half, about 1 to 1.5 hours.
Remove the saucepan from the heat and take out the lemon peel.
Prepare a round tin mold (about 1.5 pints).
Cut a slice of bread about ⅛ inch thick, round to fit the mold.
Melt and clarify ¼ pound of butter in a saucepan.
Cut the round of bread into quarters, dip them in clarified butter, and place them at the bottom of the mold.
Cut additional slices of bread ⅛ inch thick and the depth of the mold in length.
Cut these slices into 1-inch wide strips.
Dip the strips in clarified butter and place them around the inside of the mold, overlapping slightly.
Pour the apples into the center of the mold.
Cover the apples with another round of bread.
