Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream together the butter, lard, and brown sugar.

  3. Add the eggs and sweet milk, mixing well.

  4. Stir in the chopped raisins.

Mix and bake

  1. In a separate bowl, combine the baking powder, spices, and flour.

  2. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  3. Pour the batter into a greased cake pan and bake for about 30-40 minutes, or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and tenderness through fat that coats flour and softens the crumb.
Brown sugar
Adds sweetness and moisture, and helps the cake brown and stay soft.
Eggs
Provide structure and binding, and help the batter hold its risen shape.
Flour
Forms the structure of the cake as its proteins set during baking.
Baking powder
Releases gas in the batter to make the cake rise and turn light.

The step that matters

Stirring the dry ingredients into the wet mixture. Overmixing once the flour is added develops gluten, which makes the cake tough and dense. Stir only until the flour is just combined.

Swap the clove

How well each one fits the dish's main ingredients (butter, beef, sugar, egg, milk, raisin, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Clovethe original
  4. Gingerfits about as well

Fit is the average pairing score against butter, beef, sugar, egg, milk, raisin, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
