Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Suet
Adds richness and a tender, moist crumb to the dumplings.
Bread crumbs
Absorb moisture and give the dumplings body and a soft texture.
Eggs
Bind the mixture together and add structure as they set.
Sugar
Sweetens the dumplings and the sauce.
Lemons
Provide aroma and acidity from zest and juice.
Butter
Adds fat and richness to the sauce.

The step that matters

Keep the pot covered while boiling the dumplings. Covering the pot holds steam and heat steady so the dumplings cook evenly through during the full hour, rather than drying out or cooking unevenly as the water level and temperature fluctuate.
