Chocolate Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding base

  1. Scald the milk in a saucepan.

  2. Add the bread crumbs and grated chocolate to the milk.

  3. Remove from heat and stir in the sugar and beaten egg yolks.

  4. Pour the mixture into a pudding dish and bake at 350°F (175°C) for 15 minutes.

Top and serve

  1. Make a meringue by beating the egg whites and adding 3 tablespoons of sugar.

  2. Spread the meringue over the pudding and brown it in the oven.

  3. Serve cold with cream.

What each ingredient does

Bread crumbs
Absorb the hot milk and set into the body of the pudding.
Egg yolks
Thicken the custard and enrich it as it sets.
Egg whites
Whip into a meringue that forms a light, browned topping.
Milk
Forms the liquid that softens the crumbs and sets into custard.
Grated chocolate
Provides the chocolate flavour and dark color throughout the pudding.

The step that matters

Spread the meringue over the pudding and brown it in the oven. Egg white meringue can weep or stay pale if underbaked or if sugar is not fully dissolved. Spreading it fully to the edges helps it seal and brown evenly.
