Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream together the sugar and butter until light and fluffy.

  2. Mix the milk and corn starch together, then add to the creamed mixture.

  3. Incorporate the egg yolks, flour, and baking powder until well combined.

  4. Fold in the egg whites gently until just mixed.

  5. Add lemon flavoring to taste.

Bake and frost

  1. Pour the batter into a greased cake pan and bake at 350°F (175°C) until a toothpick comes out clean.

  2. Once cooled, frost with boiled frosting.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and add richness and tender texture.
Egg whites
Folded in to add lift and a light, airy crumb.
Egg yolks
Add richness, moisture and structure to the batter.
Flour
Provides the main structure that sets as the cake bakes.
Baking powder
Releases gas during baking so the cake rises.
Corn starch
Softens the crumb and gives a more tender texture than flour alone.

The step that matters

Folding in the egg whites. Egg whites hold air that gives the cake its lift. Overmixing deflates them, so fold gently and only until just combined, or the cake will bake up dense.
