Why it works: Clove and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Coffee Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the butter and brown sugar until light and fluffy.

  2. Beat in the eggs one at a time, mixing well after each addition.

  3. Stir in the strong liquid coffee and dissolved baking soda.

  4. Gradually add the flour, mixing until just combined.

  5. Fold in the raisins, citron, ground cloves, and cinnamon.

  6. Pour the batter into a greased baking pan.

Bake

  1. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set in the oven.
Flour
Forms the structure of the cake as its proteins set during baking.
Butter
Adds richness and tenderness by coating flour and trapping air when creamed with sugar.
Brown sugar
Adds sweetness, moisture, and a deeper caramel flavor to the cake.
Baking soda
Reacts with the acidity in the batter to produce gas that helps the cake rise.

The step that matters

Gradually add the flour, mixing until just combined. Once flour meets liquid, overmixing develops gluten, which can make the cake tough and dense. Stop mixing as soon as the flour disappears into the batter.

Swap the clove

How well each one fits the dish's main ingredients (sugar, flour, butter, egg, coffee, raisin, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Clovethe original
  4. Allspicefits about as well

Fit is the average pairing score against sugar, flour, butter, egg, coffee, raisin, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
