What each ingredient does

Marrowfat peas
Form the main body of the puree once boiled, pounded and sieved.
White sauce
Adds richness and a smooth, creamy body to the puree.
Butter
Adds fat for richness and a glossy finish to the puree.
Sugar
Adds a touch of sweetness that balances the savoury peas.

The step that matters

Pass the puree through a sieve. Pounding leaves fibrous skins and lumps in the peas, and sieving removes them so the puree becomes smooth. Skipping or rushing this step leaves a coarse texture.

Swap the onion

How well each one fits the dish's main ingredients (peas, mint, parsley, sugar, sauce, butter):

  1. Shallotfits better
  2. Cucumberfits better
  3. Carrotfits better
