Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Mix the ground rice, flour, and powdered sugar in a bowl.

  2. Gradually add the beaten egg yolks and egg whites to the mixture.

  3. Stir in the finely shredded lemon peel until well combined.

Cook and bake

  1. Transfer the mixture to a tin stew‑pan and cook over low heat, stirring with a wooden spoon.

  2. Immediately place the pan in a preheated oven at 300°F (150°C) and bake for 40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground rice
Provides the main body and a tender, slightly crumbly structure.
Egg whites
Trap air and set during baking, giving the cake lift and a light crumb.
Egg yolks
Add richness and moisture and help bind the cake as it sets.
Powdered sugar
Sweetens the cake and contributes to a fine, tender texture.
Flour
Adds some gluten structure to help hold the cake together.

The step that matters

Cooking the mixture over low heat before baking. Stirring over low heat thickens the batter gently; if it gets too hot or is left unstirred, the egg proteins can scramble or stick to the pan, affecting texture.
