Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Form the main body of the pudding, giving it bulk and a soft, sweet flavour.
Bread crumbs
Absorb moisture and give the pudding body so it holds its shape.
Eggs
Bind the mixture and set during steaming to hold the pudding together.
Butter
Adds richness and fat, improving flavour and softness of the pudding.

The step that matters

Rubbing the carrots through a sieve. Pushing the cooked carrots through a sieve breaks them into a fine, smooth texture. Coarse pieces would make the pudding lumpy and uneven when it sets.

Swap the carrot

How well each one fits the dish's main ingredients (bread, egg, pepper, butter, sauce):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Shallotfits better
  4. Carrotthe original

Fit is the average pairing score against bread, egg, pepper, butter, sauce. Candidates are from the same food group and used in at least 100 recipes.
