Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

What each ingredient does

Flour
Forms with the butter and stock a smooth paste that thickens the mixture and holds it together.
Butter
Cooks the onion and carries flavor, while enriching the mixture and helping it brown.
Stock
Gradually hydrates the flour into a smooth, thickened binder that moistens the filling.
Cold cooked lamb
Provides the main meaty filling and flavor of the croquette.
Cold boiled potatoes
Adds body and starch that helps the filling bind and turn soft and creamy.
Eggs (in the method)
Coat the shaped croquettes so the breadcrumbs adhere and form a crisp outer layer.

The step that matters

Cooling the mixture before shaping. The filling must be cool and firm before shaping; a warm, soft mixture cannot hold its shape and may burst or slump in hot fat.

Swap the peas

How well each one fits the dish's main ingredients (lamb, flour, potato, parsley, butter, pepper, onion):

  1. Chickpeafits better
  2. Beansfits better
  3. Lentilsfits better
  4. Peasthe original

Fit is the average pairing score against lamb, flour, potato, parsley, butter, pepper, onion. Candidates are from the same food group and used in at least 100 recipes.
