Boiled Peas

Ingredients

Directions

Prepare

  1. Hull the peas and soak them in cold water for 30 minutes.

  2. Skim off any bits of hull, pods, and undeveloped peas that float to the top.

  3. Drain the peas.

Cook and finish

  1. Cook the peas in boiling water until tender.

  2. Add salt during the last 10 minutes of cooking.

  3. If needed, add sugar while cooking to enhance sweetness.

  4. When tender, there should be very little water left; dot with butter and season with salt and pepper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peas
Provide the main body and sweet, vegetal flavor of the dish.
Butter
Adds richness and a silky mouthfeel as it melts over the hot peas.
Sugar
Adds sweetness to balance the peas' natural flavor.

The step that matters

Judge doneness by remaining water. Peas must be cooked until tender and most of the water has evaporated, so the butter and seasoning cling to the peas instead of pooling in the pot. Leftover liquid dilutes flavor and makes the dish watery.

Swap the peas

How well each one fits the dish's main ingredients (butter, pepper, sugar):

  1. Almondfits better
  2. Chestnutfits better
  3. Walnutfits better
  4. Peasthe original

Fit is the average pairing score against butter, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
