Lobster Darioles with Tomatoes

Ingredients

Directions

  1. Prepare a salpicon by mixing diced lobster meat, white fish forcemeat quenelles, cayenne pepper, coarse sea salt, and a little aspic jelly.

  2. Cut the centers out of small round tomatoes and blanch them in boiling water to remove the skins without breaking them.

  3. Drain the skinned tomatoes on a cloth and place them in small dariole moulds.

  4. Fill the moulds with the lobster salpicon and cook slowly with a little water in a covered stewpan for about 30 minutes.

  5. Once cooked, drain the darioles and glaze them with a reduced tomato sauce mixed with meat glaze and a little aspic jelly.

  6. Serve the darioles in a circular row with a heap of macédoine of vegetables seasoned with stiff tartare sauce in the center.

  7. Garnish with lobster coral and parsley before serving.
