Ingredients

Directions

  1. Prepare a jardiniere of neatly cut cooked carrots, turnips, green peas, and French beans.

  2. Heat the vegetables in a little rich white sauce, season with pepper, coarse sea salt, chopped parsley, and a pinch of castor sugar.

  3. Make a plain omelet seasoned with chopped shallots, pepper, and coarse sea salt.

  4. When the omelet is ready to turn out, place the jardiniere in the center, fold the omelet, and dish it up.
