Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Melt the honey in a saucepan until hot.

  2. Mix in the moist sugar, powdered cinnamon, candied lemon, and sliced almonds.

  3. Add enough flour to form a stiff paste.

  4. Roll out the paste 2-3 times until smooth and stiff.

Shape and bake

  1. Cut into cakes about ¼ inch thick.

  2. Bake on buttered tins in a moderate oven at 350°F (175°C) for 30 minutes or more.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Honey
Adds sweetness and moisture, and keeps the gingerbread soft and binds the paste.
Moist sugar
Adds sweetness and moisture, and helps the gingerbread brown as it bakes.
Flour
Provides structure, turning the mixture into a stiff paste that holds its shape.
Sweet almonds
Adds texture and a nutty flavour that contrasts with the honey and spice.

The step that matters

Roll out the paste 2-3 times until smooth and stiff. Working the stiff paste develops its structure and evens out the dough so the cakes bake uniformly rather than cracking or spreading unevenly.
