  3. Add sugar, butter, candied lemon, and egg yolks.

  2. Pour the mixture into the pie dish and bake at 300°F (150°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb the hot milk to form a soft, thick base for the pudding.
Egg yolks
Enrich the custard and help it set as it bakes.
Egg whites
Whisked and folded in to add lightness and help the pudding rise.
Candied lemon
Adds bright, aromatic flavour and a little tang against the sweetness.
Milk
Provides the liquid that softens the crumbs and sets into the custard.

The step that matters

Folding in the egg whites. Whisked whites trap air that gives lift. Folding gently keeps that air in, while stirring or waiting too long lets it collapse and leaves the pudding dense.
