What each ingredient does

Rice flour
Thickens the milk as it cooks, giving the jelly its body.
Clarified isinglass
Sets the mixture into a firm jelly as it cools.
Sugar
Adds sweetness and balances the flavor.
Cold milk
Forms the liquid base that the rice flour thickens.

The step that matters

Boil and stir briskly until thick. Rice flour must be stirred constantly while heating, or it clumps and scorches on the bottom of the pan, leaving a grainy, uneven texture.
