What each ingredient does

Ground rice
Thickens the milk as it cooks, giving the cream a soft, body-filled texture.
Isinglass or gelatine
Sets the liquid so the rice cream holds its shape when cold.
Thick cream
Adds richness and fat, softening the set and giving a smoother mouthfeel.
Milk
Forms the liquid base that the rice thickens and gelatine sets.

The step that matters

Beat the mixture until it begins to stiffen. Beating while the mixture cools traps air and breaks up forming gel, so the dessert sets light and even. Beat too late and it becomes lumpy or fails to mould smoothly.
