What each ingredient does

Beef suet
Adds richness and fat that keeps the pudding moist and tender.
Bread crumbs
Provides body and soaks up the liquid to give the pudding structure.
Eggs
Bind the mixture and help it set firmly as it cooks.
Strawberry jam
Adds sweetness, fruity flavour and some moisture to the pudding.
Grated coconut
Contributes coconut flavour and a chewy, moist texture.
Powdered sugar
Sweetens the pudding and forms a fine dusting on the finished surface.

The step that matters

Boil for 3.5 hours in fast-boiling water. The mold must stay fully submerged and the water must keep boiling so the pudding cooks evenly and steadily. Low or uneven heat leaves the centre under-set or the texture heavy and soggy.

Swap the strawberry jam

How well each one fits the dish's main ingredients (beef, bread, coconut, sugar, egg, milk, butter):
