Trifle, Ground Rice

Ingredients

Directions

Make the rice

  1. Sweeten the milk and add lemon or other flavoring.

  2. In a saucepan, stir in the ground rice mixed with a little cold milk to form a smooth paste.

  3. Let the mixture boil gently for 5 to 6 minutes, stirring constantly.

  4. Pour the mixture into a basin and let it cool slightly.

Set and serve

  1. Place a jelly pot in the center of a glass dish and pour the ground rice around it.

  2. Allow it to cool and stiffen.

  3. Before serving, remove the jelly pot and fill the space with cold custard.

  4. Garnish with blanched almonds and fruit jelly.

  5. For a different presentation, cut the stiffened rice into shapes and fill the spaces with custard.

What each ingredient does

Ground rice
Thickens the milk as it boils and sets into a firm, sliceable body when cooled.
Milk
Forms the base liquid that the ground rice thickens into a set custard-like mass.
Cold custard
Adds a smooth, creamy layer that contrasts with the firm set rice.
Sugar
Adds sweetness to the milk base.

The step that matters

Stirring while the rice boils. Ground rice settles and scorches on the bottom of the pan if not stirred constantly, and lumps form if it is not first mixed to a smooth paste with cold milk. Constant stirring keeps the starch evenly dispersed so it thickens smoothly and sets properly as it cools.
