  2. Moisten the mixture with milk and bind it together with the whisked eggs.

  3. Beat the mixture with a wooden spoon for 20 minutes.

Fill and boil

  1. Transfer the mixture into well-cleaned sausage casings, leaving room for expansion, and tie the ends securely.

  2. Place the puddings in boiling water and boil gently for about 2.5 hours.

  3. Remove the casings.

Store and reheat

  1. If desired, hang the puddings in a cool place and re-boil for 15 minutes before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork kidney fat
Adds richness and moisture, and melts during cooking to keep the pudding tender.
Eggs
Bind the mixture together and help it set when cooked.
Ground rice
Adds body and a light, slightly crumbly texture to the pudding.
All-purpose flour
Adds structure, helping the mixture hold together after binding.
Powdered sugar
Adds sweetness and dissolves easily into the moist mixture.

The step that matters

Boil gently rather than vigorously. Vigorous boiling can split or burst the casings and make the pudding tough or uneven, while gentle heat cooks the eggs and sets the mixture evenly.

Swap the currant
