Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooking apples
Provide the bulk and flavor base, breaking down into a smooth pulp.
Carolina rice
Cooked in milk to thicken and give the pudding a soft, tender body.
Egg whites
Whisked and folded in to aerate the mixture and set it firm when cooked.
Milk
Softens the rice and adds moisture to the pudding base.
Powdered white sugar
Sweetens the pudding and dissolves smoothly into the apple pulp.

The step that matters

Folding in the egg whites. Whisked egg whites trap air, which lifts the pudding. Folding gently keeps that air in; stirring hard deflates the foam and leaves a dense, heavy pudding.

Swap the apple

How well each one fits the dish's main ingredients (rice, milk, sugar, lemon, egg):

  1. Vanillafits better
  2. Coconutfits better
  3. Orangefits better
  4. Applethe original

Fit is the average pairing score against rice, milk, sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
