Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the soup gently and give it a richer, smoother body when heated.
Butter
Adds fat and rich flavour to the vegetables as they cook in the base.
Lettuce
Breaks down during simmering to give the soup body and a mild, sweet vegetable flavour.
Soup stock
Forms the main liquid base, adding savoury depth to the finished soup.

The step that matters

Heat gently after adding the egg yolks. Egg yolks thicken through gentle heat. If the soup boils after the yolks go in, they can scramble and turn grainy, so it should be heated slowly and not allowed to boil.

Swap the onion

How well each one fits the dish's main ingredients (peas, lettuce, parsley, butter, egg, pepper):

  1. Shallotfits better
  2. Spinachfits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against peas, lettuce, parsley, butter, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
