Cinnamon Rolls

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Prepare the bread sponge.

  2. Add ½ cup butter, 1 beaten egg, and ½ cup sugar to the sponge.

  3. Roll the dough into rectangular sheets ½ inch thick and spread with butter.

Shape the rolls

  1. Sprinkle 1 tablespoon sugar and 1 teaspoon cinnamon over the butter.

  2. Roll the dough like a jelly roll and cut into ½ inch thick slices.

  3. Place the slices in a pan and let them rise until they double in size.

Bake

  1. Bake in a moderate oven at 350°F (175°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread sponge
Provides the yeasted base that gives the rolls their airy, risen structure.
Butter
Adds fat and richness, keeping the crumb tender and helping the rolls brown.
Egg
Adds structure and richness, helping bind the dough and tenderize the crumb.
Sugar
Sweetens the dough and filling and helps the surface turn golden when baked.
Cinnamon
Adds warm aroma and flavor to the sugary filling.

The step that matters

Let the slices rise until they double in size. Under-proofed rolls stay dense and heavy, while the yeast needs enough time to inflate the dough before baking sets its structure.

Swap the cinnamon

How well each one fits the dish's main ingredients (bread, butter, egg, sugar):

  1. Cinnamonthe original
  2. Nutmegfits about as well
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against bread, butter, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
