Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
The fruit absorbs the sour, spiced flavour of the pickle as it rests.
Vinegar
Its acidity sharpens the fruit and helps keep the pickle stable.
Mustard seed
Adds a sharp, pungent note that mellows during the pickling time.
Ginger
Contributes a warm, aromatic bite to the pickling liquid.

The step that matters

Resting the sealed jar. Vinegar and spices penetrate the fruit slowly, so the flavour only develops fully after the long rest. Sealing the jar while the pickle is hot keeps the contents stable while this happens.

Swap the white pepper
