What each ingredient does

Eggs
Egg yolks bind the mixture and give the pudding a rich, set custard-like body when steamed.
White bread
Soaks up the milk and sherry, giving the pudding its soft, moist crumb structure.
Sugar
Sweetens the pudding and helps balance the caramel and sherry flavours.
Milk
Provides the liquid that the bread absorbs and that the yolks set into a custard.
Almonds
Toasted until well browned, they add nutty aroma and a contrasting crunch.
Sultanas
Add moisture and chewy sweetness as they plump in the mixture.

The step that matters

Steaming the pudding. Steam gently and keep the water boiling steadily so the egg-enriched mixture sets evenly through without becoming rubbery or leaving a soggy center.
