Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich the custard and whites, whipped and folded in, lighten the texture.
Farina
Starch that thickens the milk into a soft, sliceable pudding body.
Milk
Forms the liquid base that the farina thickens and the eggs set into.
Butter
Adds richness and a smooth, tender mouthfeel to the pudding.
Sugar
Sweetens the pudding and helps stabilise the whipped egg whites.

The step that matters

Folding in the egg whites. Whipped whites hold air that gives the pudding lift. Stirring them in vigorously deflates the foam, leaving a dense result, so fold gently until just combined.

Swap the lemon

How well each one fits the dish's main ingredients (milk, sugar, butter, egg, cinnamon, brandy):

Fit is the average pairing score against milk, sugar, butter, egg, cinnamon, brandy. Candidates are from the same food group and used in at least 100 recipes.
