What each ingredient does

Eggs
Bind the mixture and, when whisked, add lightness to the pudding.
Bread crumbs
Provide the body that holds the pudding together and soaks up the milk.
Suet
Adds richness and a moist, tender texture as it melts during cooking.
Raisins
Contribute sweetness and chewy fruit texture throughout the pudding.
Sugar
Adds sweetness and helps give the pudding its flavour and colour.

The step that matters

Boiling the pudding for 6 hours. The pudding cooks gently in boiling water over a long time, so the kettle must stay supplied with water. If the water level drops, the pudding can cook unevenly or dry out at the top.

Swap the mace

  2. Clovefits better
  3. Cardamomfits better
