Lemon Pie

Oven, in the book's wordsA cool oven

Ingredients

Directions

The book says “a cool oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. Pour hot water over the bread crumbs.

  2. Add salt, sugar, lemon juice, and beaten egg yolks.

  3. Pour mixture into the pie crust and bake at 400°F (200°C) until done.

Top and brown

  1. Beat egg whites until stiff, then add 2 tablespoons of sugar.

  2. Once the pie is cool, pipe the egg white mixture over the top and brown in a 300°F (150°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Enrich the filling and help it thicken and set as it bakes.
Egg whites
Whip into a stiff foam that forms the meringue topping and browns in the oven.
Lemons
Provide the juice for tartness and the grated rind for aroma.
Bread crumbs
Soak up liquid and thicken the filling so it holds its shape when cut.
Sugar
Sweetens the filling and helps stabilise the whipped egg white meringue.

The step that matters

Beating the egg whites until stiff. Egg whites must be whipped until they hold firm peaks; under-whipped whites will weep or slump, and any trace of fat or yolk prevents them from foaming properly.

Swap the lemon

How well each one fits the dish's main ingredients (bread, sugar, egg):
