Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Prunes or figs
Provide the main fruit body, sweetness and a soft, jammy texture when stewed.
Sugar
Adds sweetness and helps the fruit form a syrupy stewed sauce.
Sherry wine
Adds acidity and aroma that balance the sweetness of the stewed fruit.
Whipped cream
Adds fat and a light, cool texture that contrasts with the warm fruit.

The step that matters

Stew the fruit until mostly cooked. Dried fruit needs enough gentle simmering in water to soften and release its sugars, but overcooking breaks it down into mush. Stopping at mostly cooked lets the sherry addition and final simmer finish the texture.

Swap the fig

How well each one fits the dish's main ingredients (sugar, sherry, wine, bread, cream):

Fit is the average pairing score against sugar, sherry, wine, bread, cream. Candidates are from the same food group and used in at least 100 recipes.
