Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Provide the bulk that holds the dumpling together and gives it body.
Suet
Adds fat that keeps the dumplings moist and rich as they cook.
Eggs
Bind the mixture so it holds its shape when boiled.
Moist sugar
Adds sweetness and a soft, molasses-like flavour.
Lemon juice
Adds acidity that brightens the sweetness and flavour.

The step that matters

Covering the cups with a floured cloth. The flour on the cloth helps form a seal and keeps steam in around the dumplings while they boil, so they cook through without drying out or becoming waterlogged.
