What each ingredient does

Rice flour
Thickens the milk into a soft, spoonable custard as it boils.
Egg yolks
Enrich the custard and help it set with a smooth, rich texture.
Egg whites
Add airiness and lightness to the pudding's texture.
Butter
Adds fat for a richer mouthfeel and smoother texture.
Lemon juice
Adds acidity that brightens the sweetness of the pudding.

The step that matters

Adding the beaten egg whites. Egg whites must be beaten to soft peaks and folded in gently after the base has cooled. Overmixing or adding them to a hot base deflates the foam and can cook them unevenly, which makes the pudding dense.
