Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green peas
Provide the main flavour and body of the soup once rubbed into a pulp.
White roux
Thickens the pea pulp so the soup becomes creamy and smooth.
Egg yolks
Enrich the soup and thicken it gently when whisked into hot milk.
Milk
Adds creaminess and softens the soup's flavour.

The step that matters

Pouring the hot milk into the egg yolks. If the milk is added too quickly or the yolks are not whisked steadily, the eggs can scramble. Adding the hot liquid gradually warms the yolks evenly so the mixture thickens smoothly.
